Variety of apples: Apples from Pays d'Auge, woody nightshade in particular Binet Rouge. Elaboration:The Pommeau is a blend of Calvados and Apple juice. A precise volume of a one year old Calvados is mixed with 'mout' (non fermented cider) - the proportions are calculated in order to obtain a final alcohol rate of 17 % vol - and stored for blending and maturation in 400 liters oak casks (4 to 5 years old cask whose tannins are not used up) so that it continues ageing for about 24 months. |

Shelf life: To store away preferably in a cellar at 12°C. Preserving in bottles : without any particular precaution. Appearance: Color: Mahogany. Appearance: Clear and bright. If kept for a long time or stored at low temprature, pommeau can become cloudy. This does not affect it's quality or it's flavor of Nose: Potent and fine. Butterscott, plums, spices with a touch of vanilla. Taste: Supple attack and mellow. Good consistency in mouth, good posture. Velvet like, spicy, prune, vanilla and butterscott aromas . End of mouth very pleasant with caramel milk and cherries. |
